Chicken Cordon Cranberry with Brown Rice and Pear Salad
2 lbs. chicken thighs boned
Trader Joes 21 Seasoning Salute
Sliced Swiss Cheese
Low Sodium Sliced Ham
Bone chicken and gently flatten with a poultry mallet or rolling pin.
Season with TJ seasoning.
Lay flat in glass oven dish. Place 1/2 slice ham, swiss and cranberries on each chicken thigh.
Fold over and cook at 425 oven for 40 mins.
Brown rice and Romaine pear salad make a nice compliment.
