Ingredients
3 Large Eggs
¼ cup plain Greek yogurt
¼ tsp cream of tartar
¼ tsp baking powder
1 tbs xylitol
1-2 tsp extract (lemon, banana, etc.)
Instructions
- Preheat oven to 300 degrees
- Line cookie sheet with parchment paper
- Use 2 small glass mixing bowls
- Separate eggs
- To the yolk: add yogurt and baking powder
- To the whites: add cream of tarter
- Whip egg white on low speed until stiff
- Mixed egg yolk mixture, fold white into the yolks
- Add 1 tbs extract (lemon, banana, almond etc. be creative!)
- Drop on cookie sheet in small drops (vanilla wafer size)
- Bake at 300 degrees for 30-40 minutes or until it will come off parchment paper without sticking
- To prevent sticking loosen from the parchment paper while hot
