Ingredients:

  • 2 eggs
  • 1 oz greek yogurt ½ for the batter, ½ for garnish
  • 2 tsp flax seed ground
  • 1 tsp baking soda
  • 1 pinch salt
  • 1 tsp Xylitol divided
  • apple pie spice to taste may substitute with pumpkin pie spice
  • 3 fresh strawberries

Directions:

  1. In a medium bowl add eggs, ½ yogurt, flax seed, baking soda, salt, ½ of Xylitol, apple pie spice and whisk with a fork
  2. Using a small hot skillet, pour in ½ the batter. Swirl to cover bottom of skillet.
  3. Batter will bubble pretty quickly, turn over, wait a few seconds, remove and place on plate
  4. Repeat with second panfake
  5. Top with 3 fresh, diced strawberries tossed with ½ tsp Xylitol; dab ½ oz of yogurt in the center
